Stuffed Paratha - Potato filling have extra-strong flavours, these warm parathas disappear fast.
A nourishnig breakfast makes a good start to the day. We find all excuses for skipping breakfast. When we skip breakfast, we also miss out on the relaxation that a meal should bring. We should all sit down and enjoy our breakfast together. These some minutes of togetherness early in the morning bring us closer to each other. One way to gather the family around the breakfast table is to provide variety and excitement in the foods you serve. Here is a preparation that will please every group.
Ingredients :
Dough
1 cup whole wheat flour (atta)
½ tsp salt
a pinch of ajwain
1 tsp ghee
Potato Filling
2 boiled potatoes- mashed
1 onion finely chopped
1 green chilli finely chopped
2 tbsp grated carrot
1 tbsp coriander leaves – finely chopped
1 tsp finely chopped ginger
¼ tsp chilli powder
¼ tsp garam masala
¼ tsp jeera powder
½ amchoor powder
salt to taste Method :
Mix all ingredients of the dough and knead to make a dough of rolling consistency with enough water. Keep dough covered for at least ½ hour.
Mix all ingredients of filling. The filling should be spicy.
Divide the dough into 4-5 balls.
Roll out each ball. Put 2 tbsp of the potato mixture.
Fold the dough over to cover the filling. Reshape into a ball and roll out thinly using a little dry flour.
Grease a hot tawa and place the paratha on it. Cook on one side for a minute, turn over and brush with ghee.
Similarly brush the other side with ghee and cook till paratha is golden brown on both sides.
Serve hot with pickles or sauce.
