The Neem Brinjal & (Baigan) recipe is bitter and astringent in taste. The recipe is easily digestible and increases digestive fire. Thus, it is used as an appetizer. It is balanced recipe - Neem is cold while Baigan is warm in nature.

The Neem since is the medicinal plant that pacifies the dosha of Kapha and Pitta while Baigan pacifies Kapha and Vata dosha.

Thus, this recipe is destroyers of three problems (Tridoshshamak).

Note: The persons those are of a Pitta dosha should avoid the use of chillies.

1. 500 gm small Brinjals
2. Two cups of fresh Neem leaves
3. 2-3 dried red chillies
4. 1 spoon turmeric powder
5. Salt as per taste
6. 50ml mustard oil

Preparation Method:
1. Cut the Brinjals into small pieces then wash and keep aside.
2. Heat mustered oil and fry the Neem leaves.
3. Heat the oil in a pan, fry the red chili until becomes black.
4. Add Brinjal's, turmeric powder and salt.
5. Cover the the pan and cook for 7-8 minutes in a medium flame.
6. Ensure Brinjals become half cooked, if so; add pre-fried Neem leaves and mix them well.
7. Cook it for 5-6 minutes again and recipe is ready to serve.
8. The recipe may serve with plain rice.

Note: The persons those are of a tendency for constipation should avoid eating rice.
