Paneerchi Karanjee
Paneerchi Karanjeee is an authentic recipe from the coastal areas of Maharashtra. Other than the typical karanjeee which is cooked with a sweet stuffing, this is just an alternative for ones who prefer spicy over sweet. This unique starter serves four.Ingredients for Filling of Paneerchi Karanjee
Butter – 1 tbsp
Onions – 40 gm, finely chopped
Garlic paste – 1 tsp
green chillies - 1, finely chopped
Paneer (Cottage cheese) – 240 gm, grated
Cheese – 1tbsp, grated
Milk – 30 ml
White Pepper – 1/4th tsp
Flour – 1 tsp
Salt, as per tasteIngredients for the Dough of Paneerchi Karanjee
Flour – 200 gm
Ghee – 1 tbsp
Salt, to taste
Oil for deep fryingMethod for making Paneerchi Karanjee
Make dough by mixing the given ingredients for dough together. Keep aside.
In a fry pan, heat the butter and sauté the chopped onions. As soon as the onions turn slight pink, add the garlic paste, green chillies, grated paneer, cheese, milk, pepper powder and flour. Keep stirring till it turns thick. Add salt to taste.
Divide the dough into even portions and roll out puri from each portion.
Place a little filling one side of each puri and fold the other half to cover it. Crimp the sides and seal it with little water. It should resemble a karanjee.
Deep fry the karanjee in hot oil till golden brown. Remove and serve hot with green chutney.
