Tamilnadu Chutney Powder Idli Dosa Milagai Podi Recipe


Idli Milagai Podi is a spicy reddish chutney powder which is stored in airtight glass bottles or containers in all Tamil homes. This is the most needed item which should be served with Tamilnadu Tiffin varieties like idli, dosa, Uthappam and the tempting flavor makes one to eat more. This idli milagai podi is and instant Tamilnadu chutney powder which is served by adding gingelly oil or ghee. Each and everyone have their own version and here I post the traditional idli milagai podi of my grandmother's style. Ingredients needed for Idli Dosa Milagai Podi


2 cups - Red chillies
1/2 cup - Bengal gram dal (kadalai paruppu)
1/2 cup - Urad dal (uzhutham paruppu)
4 tsp – Gingelly seeds or ellu
A small piece of rock asafoetida
A tsp of Rock salt
A tsp of Oil.

How to prepare Traditional Idli Milagai podi


1.Heat a Kadai preferably an iron kadai and dry roast both the dals the bengal gram dal and the Urad dal separately until they turn deep brown in colour. Take care that the dals should not be overfried or underfried.

2.Now add oil in the same kadai and roast the piece of asafoetida. Always use rock asafoetida instead of the powder because it will be more spicy and tasty. Remove from fire.

idli milagai podi photo3. In the same kadai fry the red chillies in a low flame so that it ws not burnt. Add the required amount of salt and remove from the stove.

4.Allow the roasted ingredients to cool and dry grind all to a little coarse powder in a mixie.

Variations of idli dosa milagai podi
If you like the flavor of garlic then instead of ellu you can dry roast 5 flakes of garlic till it turns brown and grind with the other ingredients. This will be good for pregnant ladies who should avoid the consumption of ellu in their diet.
