Here is the South Indian Tamil Curry Recipe Vegetable and Clusterbeans Kofta Curry. It tastes good with Chappatis, Puris, Parathas and with Steamed rice.
Ingredients Required for Tamil Recipe Vegetable and Clusterbeans Kofta Curry:
Ingredients For Koftas:
Cluster beans - 1/2 kg
Gram flour - 1/2 cup
Chilli powder - 1/2 tsp
Green chillies - 10
Coriander powder - 1/2 tsp
Dried mango powder - 1 tsp
Coriander leaves - a few
Ghee or Oil for frying
Salt to taste
Ingredients For Curry:
Cauliflower - 100 gms
Peas - 100 gms
Carrots - 250 gms
Medium sized Onions - 3 or 4
Red chillies powder - 1 tsp
Turmeric - 1 pinch
Tomatoes (medium) - 5 or 6
Garam masala - 1 tsp
Curry leaves - a few
Green chillies - two
Salt to tasteMethod: How to make Tamil Recipe Vegetable and Clusterbeans Kofta Curry:
1. Wash, cut and cook the cluster beans till soft.
2. Drain off the water, cool and then add the rest of the kofta ingredients except the gram flour. Grind to a fine paste.
3. Then add the gram flour and mix well. Make into medium sized balls.
4. Fry in ghee or oil till brown. Keep them aside.
5. To make the curry, cut the onions and green chillies and fry in ghee till brown.
6. Add four cups of water. Put in chopped tomatoes, boiled peas, finely chopped and boiled carrots and cauliflower, coriander leaves, salt, chillies, coriander powder and turmeric.
7. Mix well and simmer till the gravy thickens into a soft paste.
8. Add one cup of water and put in the koftas. Mix well with the gravy and add another cup of water.
9. Cook till koftas become soft. Add garam masala.
10. Now the Tamil Recipe Vegetable and Clusterbeans Kofta Curry is ready and serve it hot with Chappatis, Puris or Parathas.
