ALOO JHINGE POSTO

This a very popular Bengali dish. Jhinge is called "Ridge Gourd" in English and Posto is called "Poppy Seed" in English and "Khuskhus" in Hindi.

Items required are as follows:

  • Methi seeds- 1 tsp

  • Potatoes- 3 to 4

  • Jhinge- 2 to 3

  • Poppy seeds- 1 cup

  • Green Chillies- 2 or according to taste

  • Oil

  • Salt- according to taste

  • Peel the skin of the jhinge and cut it into small semi-circles, discarding its seeds.
Chop the potatoes into small squares.
Soak poppy seeds in warm water for about 30 minutes and make a rough paste of poppy seeds and green chillies.
Take oil in a kadai. When hot, add the methi seeds and then fry the potatoes. When they are half fried, add the jhinge. When the jhinge becomes soft, pour the poppy seed paste. Add salt. Cook for about 5-7 minutes. When the gravy gets dried up, turn off the heat. The dish is ready to be served.
It is mainly a vegetarian dish. However it can also be made non-vegetarian by adding onions before frying the potatoes.
    Enjoy your dish hot.
