Potatoes-168 grams
Championship BBQ Sauce-120 milliliter
Chicken-half and roasted
Parsley- 1 tablespoon
Cajun & green onion-1 piece

Preparation of barbeque half chicken

  • Prepare the barbeque oven – Charcoal chips take time to heat, especially in this chilling winter. Hence, these must be alighted at least one hour before the cooking starts. Make sure you add some solid fuel along with the charcoal chips on fire. Level the coal pieces and keep the tongs oiled prior to the cooking process. If you can't withstand the heat coming out from barbeque, know that the barbeque is ready to be used. Maintain proper distance from the barbeque oven for your safety.

  • Prepare sauce – Prepare a sauce to be ladled on the chicken. This choice of sauce depends on you. However, one of the interesting sauce recipes can be a combination of Worcestershire sauce, soy sauce, ketchup, vinegar & sugar. This is Championship BBQ (barbeque) sauce. Many ready-made sauces can be found in any nearby market.

  • Heat chicken in microwave- Take half chicken and first roast it. Make sure the chicken is well roasted from all sides. Now place this roasted chicken in microwave and heat it up to a minimum temperature of 75 degree Celsius to be next cooked in a barbeque.

  • Ladle the chicken with sauce – The roasted chicken is now to be cooked well in the barbeque. As a rule, an item which takes longer to cook is always placed first on the grill. Heat should be adjusted by adjusting the chicken far or close to the hottest area on oven. Now you have to ladle the top half of the chicken with 60 ml of sauce and the back side of the chicken with the rest 60 ml sauce. Use oiled metal tongs while turning the chicken to avoid any burning. The piece should contain grill marks on both sides.

  • Garnish and serve – Place 168 grams potatoes in a microwave and at a temperature of 75 degrees Celsius heat for 50 to 60 seconds only. Mash these potatoes and garnish with green onion in a plate. Place the chicken on the garnishing. To the chicken, basting juices of fruit with orange or lime juices could be added for flavor. Garnish further with some chopped parsley, some sauce on plate and the championship BBQ half chicken is ready to be served.

    This recipe of Darjeeling tea-roast chicken is given by star Chef Vineet Bhatia of Michelin. Darjeeling tea-roast chicken is an innovative chicken recipe with a hint of Darjeeling tea. The recipe is easy to make and can be prepared in a short notice of time.

    Ingredients used in the recipe

    Darjeeling tea leaves-5 tablespoons
    Vegetable oil-60 milliliter
    Chicken-1 whole
    Garlic paste- 1.5 tablespoons
    Ginger paste- 1.5 tablespoons
    Red Chili powder- 1 tablespoon
    Garam masala powder- 1 tablespoon

    Preparation of Darjeeling tea-roast chicken

  • Prepare marinate - In a bowl, place 5 tablespoons Darjeeling tea leaves, around 3 tablespoons of fresh garlic & ginger paste, red chili powder, garam masala powder and mix them all well to prepare a fine marinate. You can add some curd if you personally prefer. Rub this prepared marinate on the whole chicken and leave aside to set for around one hour.

  • Preheat the oven and roast chicken - Preheat your oven at a temperature of 175 degree centigrade. Now place the marinated chicken inside microwave and roast for about 45 minutes. Check properly to make sure the chicken is roasted well from all sides. Unevenly cooked chicken can ruin the recipe. Baste it regularly with juices. As per preference, orange or lime juices can also be used along.

  • Serve the chicken- Take out the hot roasted chicken from oven and add all basting juices. Top it with left over marinate oil in tray for added aesthetics. Garnish with parsley and small green Darjeeling tea leaves. The hot Darjeeling tea-roast chicken is now ready to serve.
