Tasty tomato rice recipe
This resource is about the tasty tomato rice recipe.They are a good source of vitamin-A and Vitamin-C. Lycopene present in the tomatoes have a potential anti-cancer properties. If tomatoes are consumed in large amounts , they are found to be good for colour and texture of the skin. Vitamin K present in tomatoes help in preventing hemorrhages.

Basmati rice = 1 cup
Tomatoes (chopped) = 4-5
Onions (chopped) = 1
Red chillies = 2
Ghee (as required)
Mustard seeds = 1/4 tsp
Urad dal = 1/2 tsp
Channa dal = 1/2 tsp
Curry leaves (few sprigs)
Cumin seeds = 1/2 tsp
Broken cashew nuts =6-8
Chopped green chilies = 2-3
Asafoetida (hing) = a pinch
Chilli powder = 1 tsp
Turmeric powder = 1/2 tsp
Garam masala (a pinch)
Ginger garlic paste (a pinch)
Coriander leaves (chopped) = for garnishing
Salt = as required
Method to make tomato rice1.Take 1 cup of basmati rice, cook it and keep aside.
2.Take a pan, add some ghee to it. We are using ghee instead of oil so that, it will give a good flavor to our rice.
3.Then, add some mustard seeds, red chillies and cumin seeds.
4.When mustard seeds splutters, add little bit of channa dal and urad dal to it.
5.Then, add the broken cashew nuts and allow it to turn golden colour.
6.Then, add little bit of ginger-garlic paste ,chopped green chillies and curry leaves.
7.Saute it for few seconds and add chopped onions, saute it till they are transparent.
8.To it, add little amount of salt, asafoetida and add the chopped tomatoes.
9.Fry it well till it gets mushy. Then add turmeric powder, chilli powder and garam masala.
10.Fry well till the raw smell goes and then add the cooked rice to it and mix it well.
11.Then ,add the chopped coriander to it and mix it well.
12.The tasty tomato rice is ready. Garnish with little coriander leaves and fried cahew pieces (optional). Serve it hot.
Tips to make tomato rice
1.Add garam masala in a very little amount so that it doesn't spoil the tasteof tomato rice.
2.Its a very good and instant recipe to be served for the guests .
3.Its tastes good and gives good flavor to the left over rice when cooked with it.
4.It goes well with raitas or any other pappad.
Instead of adding Garam Masala, adding one or two cloves after the popping of mustard, will give more taste with aroma.
