Carrot Juice and Carrot Raitha - a healthy two in one recipe

Carrot a root vegetable is a rich source of Vitamin A. Vitamin A is good for eyes. It promotes good vision. There are legends where in earlier days before the invention of night vision goggles the soldiers were asked to consume carrots to improve night vision. I even remember my parents forcing me to eat carrots quoting its good for eyes and I don't need to wear glasses. Vitamin A also gives good complexion, healthy skeletal system and good teeth. It is always better to consume vitamins in its natural form instead of pills. We would have heard that actor, actresses and those in modelling business consume lot of fruit juices especially carrot juice due to its rich source of vitamin A to improve their complexion. Also the fiber in the carrot is also good for health. We can get the entire goodness of carrot only when it is consumed in its raw form. Cooked carrot loses some of its beneficial properties. I am going to give the details on how to use carrot completely and effectively. This is a fat free and simple recipe.


Ingredients



Fresh Carrots 7
Mint 6-7 leaves
Pepper 1/2 teaspoon
Salt 1 teaspoon
4 cups Fresh Curd made out of skimmed milk
coriander leaves 1 handful finely diced

Carrot Juice



You could either use a juicer, blender or mixer for grating the carrots. Juicer is always ideal, while using mixer be careful not to grind the carrots into paste.
Peel of the carrots and cut them into small pieces. Extract the juice from the carrots or blend them and filter the carrot juice. Take the carrot juice aside. Tear the mint leaves, add to the juice and place it in the fridge. You can consume the juice after 10 or 15 minutes. You can consume with or without sugar as you please. To reduce weight you could add little piece of ginger in the juice. To make it tasty you could mix apple juice with carrot juice. You would have cocktail.
Do not throw away the carrot pieces filtered. You can also remove the carrot gratings from the juicer. This is the key ingredient in our next recipe

Carrot raitha



Take the carrot gratings and add to the fresh curd. Add pepper powder, salt and coriander leaves. It would make a yummy raitha. You could have it with chappathi or biryani. Here is the recipe for quick biryani. You can enhance the taste by adding roasted gram powder and cucumber gratings. This raitha has more cooling effect than onion raitha.
