Ingredients required for Tamil Recipe Ennai Kathirikai Fry


brinjal 1/2 kg - brinjal
1 cup - grated coconut
1 cup - onions finely chopped
1 cup - garlic
2 tsp - cumin
1 tsp - mustard
1/2 tsp - turmeric powder
2 tsp - chilli powder
Salt as required
A sprig of curry leaves
Cooking oil as required

Method for making Tamil Recipe Ennai Kathirikai Fry



1. Take the chopped onions, coconut and garlic with 1 tsp of cumin and curry leaves in a mixie and grind it to a smooth paste.

2. Take oil in a kadai, add cumin, mustard and curry leaves.

3. Now add the vertically cut brinjal pieces and turmeric powder.

4. Saute well till half cooked and then keep aside.

5. Now add the ground masala, chilli powder and salt to the the above ennai kathirikai and fry for 10 mins adding some more of oil.

6. Remove from fire when you see the oil starting to separate.
