Introduction:
Chicken xacuti is one of the delicious chicken curry used by Goan people. The main ingredients of this curry include chicken pieces, grated coconut and aromatic spices. This curry goes well with Goan pav(Bread). The delicious taste of this curry totally depends upon how well you roast your spices, the correct amount of spices used and also how fresh is the chicken. Right from my childhood this curry is one of my favorites and I love to cook it any time. I learnt the cooking style of this curry from my mother who is a great cook. Sometimes I try to modify it by using tomatoes instead of coconut, which is a more healthier option. So now without wasting further time, let's see what ingredients are required and how to prepare it.
Preparation Time: 1 hour Cooking Time: 30 minutes
Ingredients
Chicken - 1 Kilo( Cut into small pieces)
Freshly grated coconut - 1 Cup
Onions – 2 (Medium size)
Garlic- 8 Cloves of garlic
Ginger : 2 inch piece
Tamarind - 1 marble size ball
Turmeric Powder - 2 Teaspoons
Oil - 3-4 Tablespoons
Salt to taste
Cloves - 10-12
Black Pepper corns -10-12
Cinnamon - 2 inch stick
Star Anise - 2
Coriander Seeds - 1 Tablespoon
Fennel Seeds- 2 Teaspoons
Dry red chilies- 8-10
Coriander leaves : 1 small bunch
Green chilies: 5-6
Lime juice: 2 tablespoon
Procedure
Wash chicken pieces well, drain and keep aside
Make green masala paste using coriander leaves(1 small bunch), green chilies(5-6), lime juice(2 tablespoon), ginger(2 inch piece), garlic and salt with very little water
Apply this paste to chicken pieces. Mix and keep them marinated for about an hour
Peel and coarsely slice the 2 medium size onions
Add 3-4 Tablespoons of oil in a pan and fry all the whole spices mentioned above and then add them into a mixer grinder jar
In the same cooking pan, fry chopped onions till they turn light brown
Then add grated coconut and garlic(8 cloves) along with the light brown onions and fry them until the color of coconut turns to brown
Now add this mixture in the grinder jar and grind it along with roasted masala, turmeric powder , tamarind and little water to make a thick paste
.
Take the marinated chicken in a medium size saucepan, cover and cook it on medium high heat till the chicken goes nice and tender
Add the coconut paste to the cooked chicken and continue to cook for about 15 minutes on medium heat
Finally add salt , mix well and remove from heat
Conclusion
You can serve Chicken Xacuti with Goan bread which is a best choice, or you can also enjoy it with roti, naan or parathas.

This is a simple recipe and most of the spices are the ones we use in the vegetable recipes.
Regarding use of cinnamon and star anise, I have an observation. These are two different type of spices in the sense that they have their own powerful effect on a recipe. So using both of them together may not be a good idea. Star anise alone will be quite good and effective in this recipe and we can reserve the cinnamon for something else.
The author can try the variation and may find out the difference. It is not to criticise the article but to add value to it in terms of flavour and smell which are the key elements in a recipe.
