How to make tasty Uzhunnu vada?


This article is about the preparation of tasty south Indian Uzhunnu vada. It is Tasty as well as mouth watering snack. Uzhunnu vada is traditionally used with coconut chutney and sambar. It is also used as a side snack with Masala dosa and ghee roast.

Uzhunnu Vada


The uzhunnu vada is also known as Medu vada. This ia a tasty as well as mouth watering snack which is available in south India. This tasty snack made with black gram/ Dal is commonly served with coconut chutney and sambar. In south India restaurants Uzhunnu vada is served as a side food with Masala dosa, Ghee rost, ulli dosa etc. This snack is first used by Brahmins and Kongines. But now it is vey where in south India. It is smooth as well as crispier, which means children will love to eat them iun the evenings with a cup of tea. This snack can't be prepare in a sudden. Because the Dal should be soaked for almost one hour. If you have soaked Dal then you are ready to go. In Tamil Nadu Uzhunnu vada is served in the marriage function before the main food. If you eat vadas every day it is going to affect your stomach very badly. After eating enough vadas you will feel like your stomach is going to be explode, because Blach gram Dal will expand from the stomach. This is a tasty snack which is very easy to prepare. So have a look at the method.

Ingredients


Rice flour : 2 table spoon
Onion : 1/4 cup(well chopped)
Black gram Dal : 2-3 cups
Green chillies : 4-5 nos
Curry leaves : 2 sprigs
Black pepper corns : 1 table spoon(grinded)
Ginger : 2 Inch piece(Chopped)
Baking soda : 1 pinch
Salt to taste
oil to deep fry

Method


  • Soak the Black gram Dal for almost 1 hour.

  • Grind the Dal without adding water till it become a thick paste.

  • Beat the paste for 5 minutes with your hand. It will make the paste smooth and
    you can enjoy soft Vadas.

  • Add all the ingredients to the paste and mix well.

  • Add rice flour to make your Vada more crispier, And wait for 10 minutes.

  • Make a ball with the paste and press it slightly with your palms. Then make a
    hole in the ball with your fingers(it will helps you to fry the vadas
    deeply).

  • Take enough oil in a deep bottomed vessel for frying the vadas and heat it.

  • when the oil is well heated for a deep fry turn the heat into a simmer.

  • Now drop the shaped paste in to the oil slowly.

  • Fry it till it becomes golden brown. try to serve it with sambar or chutney and
    enjoy your tasy Uzhunnu vada.


  • Tips


  • Don't grind the Dal for too long, It will make your paste more sticky and you
    can't shape it.

  • When we soak the Dal, After 30 minutes the water level will be decreased. In that
    time add more water.

  • If your grinder can't grind the Dal sprinkle some water and grind.

  • Add Baking soda for make your Vadas more soft.

  • wet your hands before shaping the paste, It will prevent the paste from sticking
    in to your palm.

  • If you are making the paste and keeping it in the refrigerator for making the
    Vada later, It is better to keep the veggies and the paste separately.
