How to make Bengali Mishti Doi


Mishti Doi is one of the renowned desserts of Bengal.

For 3-5 person:

Ingredients



Milk : 1litre
Sugar : 8 table-spoon
Yogurt : 1-2 table-spoon

Preparation



1. Take milk in a fresh and thick bottom-vessel. Boiled it in midle flame.
2. Add some sugar into it and boiled it further until it's volume reduced to half of it's original quantity. Till then keep on stirring.
3. Heat the rest of the sugar in another pan, which will give it the light brown colour. This will formed caramel. Don't burn it.
4. Add this molten sugar into the milk and boil it further in low flame for another 3-5 minutes.
5. Now take it out of the flame and allow it to cool down a little bit.
6. Now add milk into a earthenware or a crystal pot and add yogurt into it.
7. Keep it in the dry,cool and dark place for whole night to ferment it. Don't shake the pot after once you kept in the dry, cool and dark place.

One can chill or refrigerate the Mishti Doi, when it is firm and set. This will increase the taste of Mishti Doi and then serve it.
