Lau Chingri(Lauki with Prawn) - A very delicious Bengali dish


Lau Chingri is a traditional hot favourite dish in Bengali household. It is a delicious preparation combining of sweet bottle gourd (Lau) and small spicy chingris. It is mainly served with steamed rice but it can also be taken with hot chapattis. it is a well known Durga Puja dish. Read this article to know how to prepare this dish.

Ingredients required for preparing Lau Chingri


1 medium sized Lau weighing 500 gms
2 medium size potatoes
150gms small sized prawns
1 tablespoon cumin seeds
1 medium size bay leaf
1 tablespoon turmeric powder
½ tablespoon red chill powder
Salt according to taste
Sugar according to taste
2-tablespoon mustard oil
Water as per requirement

Method of Preparation of Lau Chingri


Peel and cut the Lau into very small pieces.
Rub salt into those pieces and keep them aside.
Cut the potato into small size pieces also.
Heat oil in a frying pan.
Fry those chingris and keep them aside.
Add cumin seeds and the bay leaf into the same oil.
Let it splutter.
Now add the lau and stir well for 4-5 mins.
Now add the turmeric powder, red chilli powder, salt to them and mix well.
Add the sugar also.
Now add ½ cup of water to them and stir well.
Cover the pan with a lid and cook them in a medium flame till the lau becomes tender.
Now add the fried chingris and cook it for another 5 mins with cover.
When the gravy becomes semi-dried, remove it from heat.
Hot lau chingri is now ready to be served with hot rice or chapattis.
