Recipe For Banana Stem Soup And Kootu

Introduction on Banana


Banana plant is commonly found in tropical region around the world. India being a tropical country is a rich source in banana and the plant as a whole plays an vital role in our food especially down south. Banana as a fruit is very rich with all vitamins and minerals and even one whole banana would be sufficient as dinner for kids. We have different varieties of bananas available in India. Each has their own nutritional and medicinal value. The importance of banana plant is that every part of banana plant is consumed internally or externally. For instance banana leaf is used for serving food. Banana flower and even raw banana are used in side dishes. Finally stem of the banana plant is used in side dishes and soups.

Banana stem has high fiber content and lot of medicinal values. The stem can be consumed in the form of kootu, where the dal is mixed with banana stem. Soup can be also prepared using banana stem. Both the recipes have medicinal value and has proved to be good for patients with ailments such as diabetes, obesity, kidney ailments, hypertension etc. Let us see about both the recipes in this article

Ingredients for Banana stem soup and kootu


common for both soup and kootu
  • Banana stem 500 gms chopped to fine pieces ( add this to thin butter milk to avoid coloration of banana stem)
  • Onions 2 large
  • Moong dal 1 and half cups
  • Garlic pearls 3
  • Cumin seeds 1 teaspoon
  • Salt to taste
Exclusive to soup
  • 2 cups water
  • Skimmed or fat free milk 1 cup
  • Coriander handful
  • Pepper half teaspoon
Exclusive to kootu
  • 1 cup water
  • Curry leaves
  • Mustard leaves
  • Chillies green or red (based on taste levels)

Preparation of Banana stem kootu


Take a vessel add chopped banana stem, moong dal, water, garlic pearls and salt and cook the mixture. For fast cooking one can use pressure cooker. Keep the cooked mixture aside
Place a vessel in the stove and heat oil. After heating oil add mustard seeds, chillies, cumin seeds and curry leaves.
After seasoning add onions and fry them till they are golden brown. Add the cooked banana stem and dal. Wait till the mixture boils and switch off the stove. Banana stem kootu is ready.
If one needs to prepare a low fat recipe just use 1 or 2 teaspoons of oil for seasoning, also one can consume the banana stem mixture without seasoning.

Preparation of Banana stem soup


Take a pressure cooker. Add banana stem, water, cumin seeds, half cup moong dal(optional), coriander leaves, garlic pearls and onion in the vessel. Cook for 30 to 45 minutes in medium flame. Filter the mixture to take the extract. Add milk and pepper to the extract and allow it to boil for one minute and little salt and switch off the stove. Banana stem soup is ready to serve.

The banana stem that remains in the filter after extraction can be used for kootu or sambar because of its richness in fiber. Recipe for quick sambar where we can used the remainder banana stem.

Dear Joe Nisha ji, your posting is good and it is to add that the banana stem is having a good medicinal value in curing the stones in Kidney. Using the bananastem atleast once in a week it is highly helpful to remove all stomach disorders in all age group of people.
