Carrot dishes (Kerala recipe)


Carrots are very cheaply available and are rich in Vitamin A too. Consumption of carrots help to improve our vision status of eye and helps to protect the skin from dryness. They are best if eaten raw and can be used in salads also. I am introducing some carrots dishes for you guys to check out. Other ingredients used in these dishes are also rich in vitamins and nutrients.

Medicinal value of Carrots :




Carrots is a healthy vegetable which we should consider including in our daily diet. It contains beta-carotene, which can protect the body from many types of cancers, including lung cancer. It is one of the vegetable that can be eaten both while raw and when cooked. The first thing that comes to my mind about carrot is that it is a fat free food. In today's world where people are suffering from fat, carrot plays an important role. It contain zero fat. It also contains very small amount sodium and also is free from cholesterol. Including carrots in your daily life will help you to prevent many diseases. It can reduce the risk of weight related diseases such as stroke, diabetes and heart diseases.


Here is my first dish.

Carrot pickle (Kerala dish) :



Did you ever know that you can make pickle with carrot also? If not, here is the recipe for the same. The nutritional value of carrot added with the taste of pickle will make it even more yummy.

Ingredients :



  1. Carrots -3 Nos

  2. Green chilly -3 Nos

  3. Oil - 2 table spoon

  4. Mustard - 1 tsp

  5. Curry leaves -2 sprig

  6. Ginger - 1 small pieces

  7. Garlic - 3 flakes

  8. Green chili – 4Nos

  9. Chili powder-1/2 spoon

  10. Asafoetida - 1/4 small tsp

  11. Fenugreek - 1/4 small tsp

  12. Vinegar - 2tsp

  13. Water-1/4 cup

  14. Salt - for taste



Method of preparation :




  1. Fry the asafoetida and fenugreek powder by low heat.

  2. Heat a fry pan and add oil and splutter the mustard.

  3. Add curry leaves.

  4. Add the carrot pieces, ginger (small pieces),garlic small pieces and green chilly( small pieces) stir well untill it to brownish colour by low heat.

  5. Add water and cover the pan cook it by low heat.

  6. After that add salt, chili powder and dried asafoetida and fenugreek powder.

  7. Mix well by low heat and off the flame.

  8. After 20 minutes add vinegar and 1 tsp oil and stir well.

  9. We can garnish it with curry leaves.

  10. Taste it with rice.



Here is my second dish.

Carrot Pachady (Kerala recipe) :



Other than carrot, Yogurt is used to make Carrot Pachady. Yogurt is considered good for our health as it has the ability to decreasing body weight and it also provides good bacteria for our digestive tract. Yogurt contain calcium that is good for health and protect the body from calcium deficiency diseases such as Osteoporosis. This types of dishes gives both taste and at the same time provides nutrients to the body.



Ingredients :



  1. Carrot - 3 (small pieces)

  2. Small onian-4 Nos

  3. Ginger -1 small pieces

  4. Green chili – 5 Nos (3 Nos make in to small pieces)

  5. Mustard - 1/4 tsp

  6. Curry leaves - 2 sprigs

  7. Turmeric powder - 1/4 small tsp

  8. Oil - 2 table spoon

  9. Water - 1 table spoon

  10. Salt - to taste

  11. Yogurt- 3 table spoon


Method of preparation :


  1. Make a paste of ginger, mustard and green chilly.

  2. Heat a pan and pour oil into it, then splutter mustard seeds.

  3. Add chopped small onion and stir well until it turn brownish in color.

  4. Put chopped carrot pieces, salt, turmeric powder and mix it well with the onions, then add water.

  5. Cover the pan and cook in low flame.

  6. After the carrot is cooked, add chilly, ginger and mustard paste in to the pan.

  7. Stir well.

  8. At last add yogurt and mix everything very well.

  9. Garnish with curry leaves and halved green chilly pieces.

  10. Serve it with rice.
